Tasty Coconut Flour Muffins

Tasty Coconut Flour MuffinsIngredients

  • 4 eggs
  • 1/4 cup butter, melted
  • 1/4 cup water
  • 1/4 teaspoon sea salt
  • 1/3 cup coconut flour
  • 1/4 teaspoon baking soda
  • 1/4 cup grated parmesan cheese, plus a little extra to sprinkle on top
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil


  1. Preheat oven to 200° C.
  2. Combine eggs, butter, water and sea salt until well mixed.
  3. Sift in coconut flour and baking soda and keep mixing thoroughly.
  4. Add parmesan cheese and dried herbs.
  5. Spoon batter evenly into six muffin cups.  Sprinkle extra cheese on top of each muffin…you decide how much you want. 
  6. Bake for 13-14 minutes until just golden on top and a toothpick inserted into the middle of a muffin comes out clean.  Let cool for a moment and enjoy!

Health tip: Coconut flour is rich in protein, fibre and fat which makes it exceptionally filling. Coconut flour is also a good source of lauric acid, a saturated fat, thought to support healthy immune function and thyroid function.
