Sweet Potato and Chickpea Curry

CurryAre you looking for an easy curry dish? This curry dish is packed with delicious flavours. Great side dish for 4 or main meal for 2.


  • 1 tablespoon coconut oil
  • 1 onion, finely chopped
  • 1 tablespoon ginger, grated
  • 1 teaspoon curry powder
  • 1 cup vegetable stock
  • 1/2 sweet potato (approx. 400 g) , cut into small cubes
  • 400g tin chickpeas, rinsed and drained
  • large handful of baby spinach leaves
  • 200 ml coconut milk
  • Lemon or lime juice
  • Salt, to taste


  1. Heat coconut oil in a large saucepan over low heat.
  2. Add onion and garlic and gently sauté for a few minutes until soft.
  3. Add ginger, curry powder and stir for 1 – 2 minutes.
  4. Add vegetable stock and sweet potato cubes. Bring to boil, reduce heat and gently simmer until sweet potato is soft, around 10 – 15 minutes.
  5. Add chickpeas and cook for another 2 minutes.
  6. Add spinach leaves and coconut milk. Check the balance of flavours, add lemon or lime and salt as required.
