Ripe Pear Muffins

Ripe Pear MuffinPears can easily go off and nobody wants to eat them anymore. This recipe is perfect to use up deliciously sweet and juicy pears.


  • 3/4 cup sugar (or your sweetener of choice)
  • 1 cup of milk
  • 1 egg
  • 1/4 cup coconut oil (melted)
  • 1/4 cup cacao nibs (optional)
  • 2 pears-cored and cut up finely but leave some chunks (use 3 if they are small)
  • 1 tsp vanilla or cinnamon (optional)
  • 2 cups flour
  • 3 tsp baking powder


1. Preheat oven to 190°C and prepare muffin tin. Makes about 12 medium sized muffins.

2. Put the first 7 ingredients into a bowl and mix well.

3. Add remaining ingredients and blend until just mixed.

4. Two-thirds fill the muffin tins and bake for 20 to 25 minutes.

Health Tip: Pears provide fabulous full fibre benefit. One pear supplies 20% daily fibre.
