Parsley Pesto


  • 1 bunch of parsley
  • 1/3 cup of olive oil
  • 1 cup unsalted raw cashews
  • 2 tablespoons filtered water
  • 1 clove of garlic, cut finely
  • 2 tablespoons of parmesan
  • 1/4 teaspoon Celtic sea salt (optional)
  • salt and pepper or favourite seasoning


  1. Cut half the stems off the parsley, wash the leaves in a bowl of water and shake off any excess water before placing them into a food processor. Add all the remaining ingredients and blend well.

Health tip: Parsley is rich in vitamin A, vitamin C and iron preventing colds and viruses. Parsley is a potent herb and large quantities should be avoided during pregnancy and in cases with kidney inflammation.
