Nutty Muffins (gluten, grain and sugar free)

Nutty Muffins (gluten & grain free)Ingredients:

  • 2 1/2 cups of ground almonds (can be replaced with other nuts or seeds)
  • 1/4 cup of softened butter (or coconut oil or yoghurt)
  • 3 eggs
  • 1 – 1 1/2 cups of dried fruit
  • 2 mashed bananas


  1. Preheat oven to 180° C.
  2. Mix all the ingredients well. You may want to add more or less ground almonds to reach porridge-like consistency.
  3. Put mixture into prepared muffin tray.
  4. Bake in the oven for about 35 – 50 minutes. Depending on muffin size and oven. Check occasionally by inserting a skewer. If it comes out clean, the muffins are cooked.

Health tip: To make variations of this muffin recipe, you can add some salt, pepper, dried herbs, tomato puree, grated cheddar cheese, seeds, fresh or frozen berries, chunks of cooking apple, grated carrot, chunks of pumpkin. If you want to sweeten the mixture add 1/2 cup of honey into the mixture.
