Lentil and Cheese Bake

This healthy bake is easy to make and full of protein and fibre. Did you know lentils have been around for ages and were once termed ‘poor man’s meat’. In fact, Egyptian labourers were powered by lentils a long time ago when the mighty pyramids were built.


  • 1 tbsp. coconut oil (or oil of choice)
  • 1 onion, chopped
  • 1 carrot, chopped,
  • 1 celery stick, chopped
  • 1 cup red lentils
  • 1 clove garlic, crushed
  • 1 tbsp. tamari sauce (wheat free soy sauce)
  • 2 tbsp. wholemeal breadcrumbs
  • 1 cup cheese, grated
  • 2 tbsp. parsley, chopped
  • 1 tbsp. black seeds (Nigella Sativa seeds)
  • 1 egg, beaten
  • 2 tbsp. sesame seeds


  1. Heat oil in pan, cook onion until softened.
  2. Add carrot, celery, lentils, water, garlic and tamari sauce. Cover, bring to the boil, then reduce heat and simmer gently for about 15 – 20 minutes, or until all the water is absorbed.
  3. Add 3/4 of the grated cheese, parsley, black seeds and egg to the lentil mixture and mix well. Spoon mixture into a prepared shallow dish.
  4. Sprinkle sesame seeds and remaining cheese over the top.
  5. Bake in preheated, moderate oven, 180°C for 45 minutes or until the top is golden brown.

Serve hot with tomato sauce, potatoes and seasonal vegetables or enjoy cold with a crisp green salad.
