Delicious Chocolate Cake

Some occasions demand a cake, and this is a perfectly delicious solution.

Chocolate CakeIngredients for chocolate cake:

  • 1 1/2 cups unbleached bakers flour
  • 1 cup brown sugar
  • 3/4 cup cocoa powder
  • 1 tsp baking soda
  • 1 1/4 cup chocolate soy milk
  • 175g vanilla soy yoghurt
  • 1 tbsp apple sauce
  • 1 tsp vanilla extract
  • 1/4 cup slivered almonds (optional)

Ingredients for chocolate frosting:

  • 1 cup icing sugar
  • 1/4 cup cocoa power
  • 1/4 cup soy milk
  • 1/4 tsp vanilla extract


  1. Preheat the oven to 190ºC. Prepare round  non-stick silicone baking pan.
  2. In a mixing bowl, whisk together the flour, sugar, cocoa and baking soda.
  3. In a small bowl, whisk together soy milk, yoghurt, apple sauce and vanilla until very smooth. Stir into the flour mixture until well blended. Stir in the nuts if you are using them.
  4. Spread the batter into the baking pan and smooth the top. Bake until a wooden tooth pick inserted into the centre comes out clean, about 25 minutes. Set the pan on a rack to cool for at least 30 minutes.
  5. For the chocolate frosting, combine icing sugar, cocoa and vanilla. Start adding soy milk, a little at the time, to reach a spreadable consistency. More soy milk may be required.
