Curly Kale Pies

Kale is a nutritional powerhouse

One cup of chopped kale contains 33 calories and 9% of the daily value of calcium, 200% of vitamin A, 130% of vitamin C, and a whopping 600% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus. Most importantly my kids gave it the thumbs up.

Ingredients for 8 pies:

  • 2 tbsp. coconut oil
  • 450 g curly kale, washed, stalks removed and chopped
  • 250 g feta cheese, cut into small cubes
  • 1 tbsp. tamari sauce
  • 2 garlic cloves, finely chopped
  • 1 onion, finely chopped
  • 1 tsp. turmeric
  • 1 tsp. cumin
  • optional 1 tbsp. black nigella seeds
  • 1 packet puff pastry
  • grated cheese

Instructions:

  1. Preheat oven to 220°C.
  2. Stir-fry kale in the oil for 2 minutes and add next 7 ingredients one by one, stirring in between.
  3. Add a little bit of water and simmer gently for 5 – 10 minutes or until kale is soft.
  4. Prepare muffin tin. Cut puff pastry according to size of muffin tin and place pastry accordingly.
  5. Spoon kale mixture onto puff pastry and spread some grated cheese on top.
  6. Bake in oven for 15 – 20 minutes or until golden brown.
