Crunchy corn chips

Corn chips 1Do you ever buy an ingredient with great intentions of using it later? I have had maize flour sitting in my pantry for a while. As I forgot my initial plan, I had to work out what to do with maize flour.

Inspired by corn tortillas and a fan of crunchy food, I have been experimenting with my own corn chips. Commercially bought corn chips are usually full of fat and sodium. Making your own is surprisingly easy.


  • 2 cups maize flour
  • 1/2 teaspoon salt or salt and pepper
  • 1 cup hot water


  1. Prepare oven to 170°C.
  2. Mix maize flour and salt in a mixing bowl.
  3. Add hot water and stir to combine.
  4. Using your hands, knead the dough for a minute or two in the bowl. The dough is ready when it is smooth and forms a ball in your hand.
  5. Adjust too-dry or too-wet dough as needed. If the dough is too dry and crumbly, add a tablespoon of water. If the dough feels sticky or paste-like, add more maize flour.
  6. Using a rolling pin, roll out the dough between two sheets of baking paper to a very thin consistency.
  7. Place baking paper and dough onto tray, cut into square sized pieces and use topping of your choice. I added a very small amount of olive oil and placed some grated cheese on others.
  8. Cook in prepared oven for 15 – 20 minutes or until crunchy.
