Cornbread Muffins

Cornbread muffinThese muffins are the easiest muffins I have ever made. They are not really sweet and go nicely with a bowl of soup or some tahini and jam.

Ingredients:

  • 2 cups of maize flour (100% maize or corn)
  • 2 cups of oat bran
  • 4 tsp of baking powder
  • 2 cups of apple juice (unsweetened if possible)

Instructions:

  1. Preheat oven to 180ºC.
  2. Mix maize flour, oat bran, and baking powder together.
  3. Add apple juice and stir until just mixed.
  4. Spoon the batter into nonstick muffin cups and bake for 30 minutes, or until lightly browned.
