An apple a day keeps the doctor away. The benefits of a daily apple are well known. – We are blessed with a beautiful apple tree that has given us deliciously crunchy apples. Other than enjoying our daily apple intake, we have been making a very tasty apple crumble.
Ingredients:
Base
- 600g apples (4 – 6 apples, depending on size), cored and cut into small pieces
- 1/4 cup water
- 20g coconut oil
- 1 tsp ground cinnamon
- 1/3 caster sugar
Top
- 1/3 cup caster sugar
- 1/3 flour
- 1/2 cup desiccated coconut
- 2/3 cup flaked almonds
- 50g coconut oil, melted
Instructions:
- Core apples, then cut into rough 1-2cm cubes. Place apples in large saucepan and add water, coconut oil, cinnamon and castor sugar. Simmer (but don’t boil) covered with lid on med-high until apples are just tender but not too soft (usually 5mins once water is simmering). Pour apple mixture in a baking dish.
- Combine caster sugar, flour, desiccated coconut, almonds in bowl and add melted coconut oil. Spread evenly over apples.
- Bake at 180° C for 30-40minutes, or until crumble topping is slightly browned.
Health tip: Apple skin contains amazing plant chemicals (anthocyanins and quercetin) that keep us healthy and fight cancer. Before biting into your next apple, soak your apples with a splash of vinegar to remove toxic residues. Enjoy.
