Chocolate Brownies

Choc BrowniesThese brownies have a nice rich flavour and are a perfect pick me up for the mid-afternoon energy slump or after school. All ingredients are plant based and leaving out the nuts makes them a perfect lunch box snack.


  • 2 tbsp Egg Replacer 
  • 1 cup unbleached flour
  • 2/3 cup cacao powder
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 1/4 cup chopped cashews or walnut (optional)
  • 1 cup apple sauce
  • 3/4 – 1 cup sugar
  • 1 tsp vanilla extract


  1. Preheat oven to 180ºC.
  2. In a small bowl, whisk egg replacer with 1/2 cup warm water until frothy. Set aside.
  3. In a medium bowl, whisk together the flour, cacao, baking powder, bicarbonate of soda, and salt. Stir in the nuts, if using. Set aside.
  4. In a small bowl, whisk together the apple sauce, sugar, and vanilla. Add egg replacer. Stir mixture into the flour mixture just until the ingredients are combined.
  5. Spread the mixture evenly into a nonstick or silicone baking pan, smoothing the top.
  6. Bake until a wooden pick inserted in the centre comes out clean, about 30 minutes.
