Chocolate Beetroot Brownies

  • 450 g beetroot, cut into large diced pieces
  • 1/2 cup raw sugar
  • 3 eggs
  • 3/4 cup raw cacao powder
  • 100 g butter or coconut oil, softened
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 250 g almond meal


  1. Preheat oven to 180C degrees. Place beetroot pieces in a roasting pan and roast until tender. Using a pressure cooker is another faster alternative. Remove and allow to cool. Keep oven at 180C degrees.
  2. In a food processor combine eggs and sugar until light coloured and smooth.
  3. Add cacao powder, softened butter or coconut oil, vanilla extract, baking powder and almond meal and process until well combined. Add cooked beetroot and mix well.
  4. Pour mixture into a prepared lined baking tray (approx. 19 cm x 28 cm).
  5. Bake approx. 30 – 40 minutes at 180C degrees or until cooked. Cool in baking tray.
  6. Cut into squares and watch them disappear.

Health tip: The raw cacao powder is a fantastic source of antioxidants and magnesium. Enjoy!
