Choc Chip Cookies

 Choc Chip Cookies







  • 1 1/2 cups almond meal
  • 1/4 cup butter or coconut oil, slightly melted
  • 1/4 cup raw sugar
  • 1 egg
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1/4 cup 70% cacao chocolate, chopped finely
  • 1/4 cup pecan or other nuts, chopped finely


  1. Preheat oven to 180C.
  2. In a bowl, cream butter/coconut oil and sugar.
  3. Gradually beat egg into butter/sugar mixture.
  4. Add almond meal, salt, vanilla and baking soda and mix well.
  5. Add choc chips and nuts.
  6. Roll dough into small balls (2.5 cms), place on non-stick baking surface and flatten slightly.
  7. Bake for 12 – 15 mins until golden brown.
  8. Remove cookies from oven and let them cool before moving. Store at room temperature in a sealed container.

Health tip: Almonds are a fantastic source of the energy producing CoQ10. Combined with the antioxidants of cacao there is no better excuse to enjoy these delicious cookies. You will have to hide them from your family…
