Cherry Flan (gluten free)

It is cherry season in Australia. Cherries are packed with painkilling power and are often used for treating gout. They also provide melatonin for a good night’s sleep. What are you waiting for – cherish the cheerful cherry benefits.


  • 2 tbsp. almond meal
  • 2 tbsp. flaxseed or linseed meal
  • 1/4 cup castor sugar
  • pinch salt
  • 2 eggs
  • 1 egg yolk
  • 1 tbsp. coconut oil
  • 1 tsp. vanilla (a vanilla bean could be used instead)
  • 1 1/4 cup milk
  • about 300g ripe cherries (retain pips to enhance flavour)


  1. Preheat oven to 180°C.
  2. Combine almond meal, flaxseed meal, sugar and salt.
  3. Make well in the centre and use a wooden spoon to add eggs and yolk.
  4. Beat in coconut oil and milk, until light and smooth.
  5. Spread fruit evenly in bottom of a greased medium flan dish.
  6. Pour mixture over fruit and bake for about 45 minutes or until a knife inserted comes out clean.

Serve warm or cold, goes nicely with custard or ice cream.
