Kale & Cashew Soup

A delicious soup when you are hanging out for some comfort food – the soup that feels like a hug.

Ingredients for 4 serves:

  • 10 g butter
  • 2 garlic cloves, crushed
  • 1 large onion, finely chopped
  • 1 carrot, finely chopped
  • 2 celery stalks, finely chopped
  • 1 small sweet potato, peeled and cut into 1 cm cubes
  • 2 large handfuls of kale, de-stemmed by ripping off the leaves and roughly chopped
  • 1 cup cashews, soaked in water for at least 1 hour
  • 3 cups vegetable stock or water
  • 1 tablespoon apple cider vinegar

Instructions:

  1. In a large saucepan heat the butter over medium heat. 
  2. Sauté the garlic, onion, carrot, celery and sweet potato for about 10 mins until softened.
  3. Add the remaining ingredients and bring to the boil. Reduce the heat to low and simmer, covered, for about 10 mins until the vegetables are well cooked.
  4. Remove from the heat, allow to cool a little, then blend with a hand/stick blender until smooth.
  5. Thin with extra stock or water, if you like, and season well with salt and pepper. Reheat gently to serve.

This soup ticks all the right boxes and allows you to smuggle in some green veggies for the fussy eater. Add some sour cream, yoghurt or grated cheese for a richer, creamier taste.
