Buckwheat Cacao Slice

Buckwheat is not a type of wheat, but is actually related to the rhubarb family. Unlike many of the other so-called “whole grains”, buckwheat is not technically a grain nor a cereal, it is a seed. Even better, it is gluten-free and perfect for people with digestive issues. Buckwheat is also well known to strengthen capillaries and blood vessels.

Ingredients:

  • 2 cups roasted cooked buckwheat
  • 1 cup buckwheat flour
  • 3/4 cup raisins or currants
  • 1/2 cup sugar or sugar alternative of choice
  • 2 cups of water
  • 1/2 cup cacao powder
  • vanilla essence

Instructions:

  1. Preheat oven to 200°C
  2. Combine first two ingredients.
  3. Simmer raisins and sugar in water 20 minutes.
  4. Combine raisin mixture with buckwheat mixture.
  5. Add cacao powder and vanilla essence and mix well. Optional ingredients could include desiccated coconut, nuts and seeds. 
  6. Bake in a prepared baking tray for approx. 25 mins.
  7. Allow to cool before cutting into slices. Enjoy.
