Brunsli (Swiss Brownies)

BrunsliThese chocolate cookies are often described as Swiss brownies. The combination of almonds and chocolate create a satisfyingly chewy texture, while cinnamon and cloves impart an unmistakable flavour of old-fashioned Christmas cheer.


  • 150g sugar
  • 1 pinch salt
  • 250g almond meal
  • 1/4 tsp cinnamon
  • 1 pinch clove powder
  • 2 tbsp cacao powder
  • 2 tbsp flour
  • 2 egg whites
  • 100g cooking chocolate (grated or melted)


  1. Mix first 7 dry ingredients in a bowl.
  2. Add egg whites and mix.
  3. Add grated or melted chocolate and work into a dough. Refrigerate.
  4. Sprinkle a big piece of baking paper with sugar and transfer dough to paper. Put another piece of baking paper over dough and roll dough to 1 cm thickness.
  5. Cut out cookies with star-shaped cutters and transfer onto baking tray.
  6. Leave unbaked cookies in tray for 5 – 6 hours or over night.
  7. Heat oven to 250ºC. Bake cookies for 4 – 6 mins. Allow to cool.
