Berry nice muffins

berry-nice-muffinsPerfect pick me up for when you feel like something sweet and want to stay on track with your healthy food choices. 

Ingredients:

  • 1/2 cup goji berries
  • 1/2 cup dried dates
  • 1 cup boiling water
  • 3/4 cup flour
  • 1 tsp baking powder
  • 1/2 tsp bicarb soda
  • 1 tsp cinnamon
  • 1/2 cup rolled oats
  • 1/4 cup desiccated coconut
  • 1/3 cup milk of your choice (soy works well)
  • 1/2 tsp vanilla
  • 1/3 cup unsweetened applesauce 
  • 1 large ripe banana, mashed

Instructions:

  1. Preheat oven to 200°C.
  2. Soak goji berries and dried dates in hot water for about 10 minutes.
  3. Drain goji berries and dates and blend in food processor.
  4. Add all other ingredients until well combined (do not overmix).
  5. Bake in mini muffin tin for 20 minutes or until lightly browned.

Makes 20 mini muffins.

Health tip – goji berries are a fantastic source of antioxidants and have been shown to be beneficial for eye health in particular.
