Have you got really, really ripe bananas you want to use up? The following recipe is perfect. Just watch the banana bread disappear when it is fresh out of the oven. Thank you Chantal Jackson for sharing.
Ingredients:
- 600 g mashed banana
- 1 tsp baking powder
- 1 tsp cinnamon
- 200g dessicated coconut
- 200g wholemeal flour or almond meal
- ¼ cup coconut oil (add more if mixture is too dry)
Instructions:
- Preheat oven to 170 degrees.
- Mix all ingredients.
- Bake 30 – 35 minutes in lamington dish until golden brown and skewer comes out clean.
Health tip: Bananas contain serotonin and norepinephrine which can help reduce depression.
