Awesome Oat Cookies

oat-cookies-2These biscuits are perfect for when your energy levels are running low and you just need a healthy and nutritious pick me up. This recipe uses rice bran oil as it is relatively heat stable and has a high smoking point.

Ingredients:

  • 1 1/2 cups rolled oats
  • 1 cup flour (I used spelt)
  • 2/3 cup raw sugar
  • 1/2 cup rice bran oil
  • 1 tablespoon golden syrup
  • 1 1/2 teaspoons baking soda (bicarbonate of soda
  • water if needed

Instructions:

  1. Preheat oven to 170ºC and prepare baking tray with baking paper
  2. In a mixing bowl, combine oats, flour and sugar.
  3. In a small saucepan on high heat combine rice bran oil and golden syrup and cook until the syrup begins to bubble (stir mixture continuously to avoid burning).
  4. Add baking soda and mix with a spoon until it foams.
  5. Remove saucepan from heat before syrup burns, pour hot foaming liquid onto dry ingredients and mix well.
  6. The cookie dough should be wet and stick when pressed into shape. Add water if needed.
  7. Make into small balls that are about 2 cms wide and place them on tray. Allow for sufficent space between cookies as they expand).
  8. Bake for 12 – 15 mins or until golden brown.

Health tip: Oats are a great nutritional food that contain a special ingredient in the fibre, known as beta glucan. It helps regulating blood sugar levels and reducing cholesterol. Oats are also a great source of much needed fibre.
