Apple Polenta Flan (gluten free)


  • 1 litre milk or milk substitute such as almond milk
  • 3/4 cup sugar
  • 45g coconut oil
  • 3 teaspoons grated lemon rind
  • 1 cup polenta
  • 1 cup currents
  • 1/3 cup chopped walnuts
  • 1 large apple, peeled and thinly sliced
  • 1 1/2 tablespoons maple syrup
  • 1 – 2 teaspoons sugar (optional)
  • 1/2 teaspoon ground cinnamon


  1. Preheat oven to 180C.
  2. Heat milk, sugar, coconut oil and lemon rind without boiling until sugar is dissolved.
  3. Stir in polenta, cook over low heat for 10 minutes, stirring occasionally.
  4. Remove from heat, stir in currants and walnuts.
  5. Pour into a prepared ovenproof dish.
  6. Top with sliced apple, maple syrup, sugar and cinnamon.
  7. Bake in moderate oven for about 35 mins or until golden brown.
